Where are you from and when did you start working at Ballyhack?  

Chef Tanner: I am originally from Lawrence Kansas, but I have been living in Hilton Head Island, South Carolina for the past 9 years. I recently moved to Roanoke, Virginia to work at Ballyhack Golf Club during the first week of March.  

 

Describe your overall approach to creating the menu at Ballyhack?  

Chef Tanner: When creating the menu at Ballyhack Golf Club, my main influences stem from a combination of Appalachian cuisine with a touch of Lowcountry flare. I believe in creating a menu that offers relatable items to our members, while also incorporating unique flavors and ingredients to keep things exciting. I strive to strike a balance between comfort food and culinary adventure, ensuring that our members feel comfortable with their choices without being overwhelmed and intimidated.  

What are some of your favorite local ingredients to work with? 

Chef Tanner: Some of my favorite local ingredients to work with include the delicious Virginia oysters, which bring a briny and fresh taste that is unparalleled. I also enjoy working with local wild game and produce, as it offers a rich and robust flavor profile that adds depth to dishes. The use of these local ingredients not only highlights the flavors of the region but also supports local farms and producers, promoting sustainability and a connection to the community.   

How is the menu at Ballyhack influenced by the regional culture?  

Chef Tanner: The menu is heavily influenced by the culture tapestry of the region, blending elements of both Lowcountry and Appalachian cuisine to create a unique and flavorful dining experience. The fusion between these two culinary traditions allows us to showcase the diverse flavors and ingredients within the area. Appalachian cuisine brings a sense of comfort food with hearty dishes and provides a sense of homestyle cooking with familiar flavors. On the other hand, the addition of Lowcountry elements adds a touch of coastal sophistication, with the vibrant and fresh seafood such as the Albatross Seafood Tower which is what we are now known for.

What do you love most about being a Chef at Ballyhack?  

Chef Tanner: As the Executive Chef at Ballyhack Golf Club, one of the aspects I love most about my role is the opportunity to work for an ever-changing membership on their trips. Their enthusiasm and curiosity about culinary experiences inspire me to push boundaries of creativity and innovation in the kitchen. Being able to introduce them to new flavors and dishes while incorporating familiar elements that resonate with their tastes is truly rewarding. I take great joy in mentoring and coaching the staff at Ballyhack. Guiding them through the culinary world, sharing my knowledge, passion and skills, while watching them grow and develop their own talents is incredibly fulfilling.

Chef Tanner: The culinary experience at Ballyhack Golf Club is truly special. It offers a unique and memorable dining experience for our members and their guests. One of the standout features of our culinary offerings is the family-style dinner menu, which allows guests to enjoy a four-course Chef’s Tasting Menu with a diverse array of delicious dishes. For those looking to elevate their dining experience even further, we offer the option of the additional Albatross Seafood Tower, a killer display of fresh seafood that adds a touch of luxury to the meal. Additionally, our unique cottage menu offerings cater to those who prefer the comfort and privacy of their own cottage after a day of golfing. This personalized dining experience ensures that all guests’ preferences and needs are met, allowing them to relax and unwind. At the heart of my culinary philosophy is the motto of giving the people what they want. By listening to our guests’ preferences and desires, we can create a dining experience that is fulfilling and rewarding for both our guests and our team.
