Italian Wines, Fire-Grilled Pizza, and Creative Cocktails

Hidden Creek’s refreshed culinary program follows the Dormie Network model of providing a fully customizable dining experience featuring locally sourced, high-quality ingredients—and it’s a hit with members.

Under the leadership of Assistant General Manager Mirza Neimarlija and Executive Chef Jeff Parenty (both hired in spring 2020), the club’s new seasonal menu and wine and cocktail program was completely redeveloped with Mid-Atlantic flavors at the forefront.

Recommended Italian Pairings
Italian wines and chiantis are popular at the New Jersey club, and Mirza also chose a few Barolos to completed the new 2021 wine list. “My favorite is the Prunotto 2016: the palate is full and well-balanced, and the tannins are velvety,” he said.

“It pairs well with the eggplant meatballs, new to our appetizer menu.” The meatballs are finished with brûlé ricotta cheese, the richness offsetting the Barolo’s acidity.

Mirza also recommends local New Jersey clams on the patio in the summer, savored with the tangy old world 2019 Vermintino from Guado al Tasso.

Reinventing the Classics, With a Twist
Since last fall, indoor dining is now open at Hidden Creek, bringing back the fine dining experience with 50% capacity indoors and out—whether you choose off the menu or prefer a personalized feast.

A recent private clam bake dinner spread included whole lobster, jumbo shrimp, clams, mussels, and chorizo complemented by local white corn, red bliss potatoes, New Jersey heirloom tomato salad, and blueberry crème brûlé. In June, the club will host an Italian wine dinner—more details to come.

Mirza, Chef Jeff, and the team also create standout experiences at the turn with cocktail spreads featuring a variety of bloody mary fixins, Tom Collins with an array of fruit tinctures, or grilled bites to go.

To increase the club’s outdoor offerings this summer, the club invested in a mobile wood-fired oven. Chef Jeff is developing an artisanal pizza menu, and will also offer wood-fired wings, coastal seafood, and other specialties. Members will also notice a new permanent formal bar near Hole 10.

Ranch Water To-Go

Canned Cocktails, and Some to Try at Home
Hidden Creek joins the network’s canned cocktail program with its own signature Creek Water featuring Casamigos Blanco tequila, pomegranate juice, locally infused blueberry simple syrup, and Topo Chico. Creek Water rounds out the three mainstay cocktails (flanked by Ranch Water and Transfusion), and the full-service bar can create other member favorites on demand, can them onsite, and put them on ice for the course.

Empress Lavender Lemonade

  • 2 ounces Empress 1908 gin

  • 2 ounces homemade lemonade

  • 1 ounce lavender honey syrup

  • Lavender sprig


Cherry-Smoked Bourbon Old Fashioned

  • 2 ounces bourbon

  • 1 teaspoon maple syrup

  • 3 dashes Angostura bitters

  • 2-inch piece of orange peel

  • Place cocktail under a dome and use a smoking gun to add smoke. Torch the orange peel before twisting.
