KPMG Women’s PGA Championship | Perfect Pairings

Dormie Network and the LPGA Women’s Network show you how to prepare chef-inspired meals and drinks based on some of golf’s most iconic championships.

This week, we celebrate the KPMG Women’s PGA Championship with a Deconstructed Philly Cheesesteak and Clover Club Cocktail, perfect for watching the tournament unfold or recapturing the excitement of the KPMG Women’s Leadership Summit.

Elevated Philly Cheesesteak

4oz Piedmontese Filet

Season the Filet with Salt and pepper and sear in a cast iron pan for 6-7 minutes on each side. For the last 2 minutes of cooking add 2 Tbsp butter, 2 cloves crushed garlic and 1 sprig of thyme and baste the steak

1 French Baguette (cut length wize)

Brush with butter and toast until golden brown

Mornay Sauce

  • 4 tablespoons butter

  • 1/3 cup all-purpose flour

  • 3 cups whole milk

  • 2 whole cloves

  • 1 bay leaf

  • 2 ounces grated Gruyère cheese

  • 2 ounces grated Parmesan cheese

Melt butter in a saucepan and whisk in flour. Cook for 2-3 minutes

Slowly add milk stirring constantly until all incorporated then add cloves and bay leaf

Cook for 10 minutes and the milk should start to thicken. Add Gruyere and Parmesan and heat until melted

Truffle Bordelaise

  • 1 cup red wine

  • ½ oz black truffle

  • 4 cups beef stock

Add red wine and truffle to a pot and cook on medium heat until the wine is reduced by half.

Add beef stock and continue to simmer on medium heat until reduced by half again.

Sautéed Peppers/ Onion/ Mushroom

  • ½ cup White onion

  • ½ cup Mushrooms

  • ½ cup Red peppers

Sautee on medium until they are tender

Clover Club Cocktail

  • 1.5 oz Bombay Sapphire

  • .75 oz fresh squeezed lemon juice

  • .75 oz of raspberry syrup

  • 1 egg white

  • 3 fresh raspberries

Put all ingredients into a tin and shake. Pour into a martini glass or coupe glass. Garnish with raspberries.
